The name itself takes us back to the ancient rural tradition. Our mission, in fact, is to continue the work begun so many years ago, always dedicating special attention to the quality of our products and contributing to helping cheese lovers discover the simple flavors of times gone by. We therefore truly appreciate the importance of recreating the bases for the techniques that our forefathers applied, using their primitive tools and equipment, to processing fresh milk from their small dairy herds. The characteristic that distinguishes our “Primitivo” cheese from other processed dairy products is the fact that we use RAW MILK as in CENTURIES PAST, when neither PASTEURIZATION of milk nor the very idea of such a treatment existed. This means that the milk, at the beginning of the cheese-making process, is absolutely natural and as such guarantees the consumer the full flavor that can be preserved in the cheese only in this way. As a further guarantee, we offer this cheese to the consumer after it has ripened for at least 60 days, the minimum period required for obtaining that old-fashioned flavor that leaves the palate with the delicious aftertaste, today only a memory, that DELIGHTED OUR PARENTS AND GRANDPARENTS!!!

The Dairy The Dairy

The Val d'Orcia Dairy was established in 1964 with the aim of preserving the ancient dairy traditions of the region, which were endangered by local farmers abandoning their farms during those years. The goal was to support the shepherds who had relocated from Sardinia with their flocks to the mainland. In this valley, all the conditions were present to ensure a future in this sector and consequently enhance the local economy.

A precious milk sourced from flocks freely grazing among the untouched hills of Val d'Orcia, enriched by the unique fragrances and scents of this renowned land, celebrated for the distinctiveness of its natural and aromatic herbs such as thyme, savory, artemisias, and other common plants in the clayey soil of Val d'Orcia. These elements give the cheeses a distinctive and unmatched character.
